Unlike the traditional torrezno from Soria, at Fino Bar Restaurante we have developed our own version, which we have perfected through numerous trials until we achieved the ideal texture and flavour.

Our technique is completely different from traditional frying. Instead of submerging the pork crackling in hot oil, we opt for a more gentle process: we vacuum-seal it and cook it in the oven at a low temperature. This method allows the fat in the meat to cook it from the inside out, resulting in a juicy, tender texture that’s full of flavour.

Most of the process – around 80% – involves slow baking, but it is the remaining 20% that makes all the difference: achieving a light, airy and fluffy crust.

Striking that balance between tenderness and crispiness has been our greatest challenge, and after much trial and error, we have perfected a technique that allows us to offer a pork crackling that is truly in a class of its own. The result is a crackling that bursts in the mouth with a perfect crunch, giving way to tender, succulent meat.
