Fino Bar takes third place in the Alcalá Gastronómica competition

The Alcalá Gastronómica Competition is one of the region’s most prominent culinary events, designed to celebrate and promote local gastronomic excellence. This annual competition brings together the best restaurants and chefs from Alcalá de Henares, with the aim of recognising and rewarding creativity, innovation and quality in cooking.

At the 10th edition, held at the end of May, Fino Bar Restaurante took third place at a gala held at the historic Corral de Comedias in Alcalá de Henares, organised by Alcalá de Henares Town Council in collaboration with the Alcalá Gastronómica Fomentur Association.

This recognition is the result of the hard work, passion and dedication of our entire team, who strive every day to offer a unique, high-quality dining experience. Competing in a competition of this calibre, alongside some of the region’s finest restaurants, has been an honour and an opportunity to showcase the very best of our cuisine.

At this year’s competition, our star dish, ‘Veal Shank Boissant with pickled onions and green tomatillo ketchup’, won over the judges with its flavour and presentation. The combination of fresh, top-quality ingredients, together with meticulous preparation, made our dish stand out from the rest. We’ll tell you all about it!

Our entry for the competition

At Fino Bar, we are delighted to present our entry for the Alcalá Gastronómica Competition, which took third place: the exquisite “Veal Shank Boissant with pickled onion and green tomatillo ketchup”. This dish is a perfect blend of flavours, textures and culinary innovation, reflecting our commitment to quality and creativity in the kitchen.

We select a high-quality veal shank and sear it over a high heat. Once seared, we cook it at a low temperature for 6 hours until it becomes tender and juicy. The meat falls apart easily, ensuring that every bite is a delicious experience. We use the juices to make a vegetable stock and prepare the sauce.

The pickled onion adds a contrast of flavours, with a tangy, crunchy touch that perfectly balances the richness of the shank. The homemade green tomatillo ketchup is the finishing touch that takes our boissant to the next level. With its slightly tangy flavour and hint of sweetness, it perfectly complements the other ingredients, delivering an explosion of flavours with every bite.
