This annual competition brings together the best restaurants and chefs from Alcal\u00e1 de Henares, with the aim of recognising and rewarding creativity, innovation and quality in cooking. <\/p><p>At the 10th edition, held at the end of May, Fino Bar Restaurante took third place at a gala held at the historic Corral de Comedias in Alcal\u00e1 de Henares, organised by Alcal\u00e1 de Henares Town Council in collaboration with the <a href=\"https:\/\/www.alcalagastronomica.es\/\" target=\"_blank\" rel=\"noopener\">Alcal\u00e1 Gastron\u00f3mica Fomentur Association<\/a>.<\/p><p>This recognition is the result of the hard work, passion and dedication of our entire team, who strive every day to offer a unique, high-quality dining experience. Competing in a competition of this calibre, alongside some of the region\u2019s finest restaurants, has been an honour and an opportunity to showcase the very best of our cuisine. <\/p><p>At this year\u2019s competition, our star dish, \u2018Veal Shank Boissant with pickled onions and green tomatillo ketchup\u2019, won over the judges with its flavour and presentation. The combination of fresh, top-quality ingredients, together with meticulous preparation, made our dish stand out from the rest. This dish is a perfect blend of flavours, textures and culinary innovation, reflecting our commitment to quality and creativity in the kitchen. <\/p>\n<p>We select a high-quality veal shank and sear it over a high heat. Once seared, we cook it at a low temperature for 6 hours until it becomes tender and juicy. The meat falls apart easily, ensuring that every bite is a delicious experience. We use the juices to make a vegetable stock and prepare the sauce.   <\/p>\n<p>The pickled onion adds a contrast of flavours, with a tangy, crunchy touch that perfectly balances the richness of the shank. The homemade green tomatillo ketchup is the finishing touch that takes our boissant to the next level. With its slightly tangy flavour and hint of sweetness, it perfectly complements the other ingredients, delivering an explosion of flavours with every bite.  <\/p>\n<p>Our boissant is a fusion of a sandwich and a croissant, offering a light, flaky texture with a succulent filling. This innovative concept is not only delicious, but also has an attractive, modern appearance. It is a creation that reflects our philosophy of combining tradition and innovation.
