Instead of submerging the pork crackling in hot oil, we opt for a more gentle process: we vacuum-seal it and cook it in the oven at a low temperature. This method allows the fat in the meat to cook it from the inside out, resulting in a juicy, tender texture that\u2019s full of flavour.  <\/p>\n<p>Most of the process \u2013 around 80% \u2013 involves slow baking, but it is the remaining 20% that makes all the difference: achieving a light, airy and fluffy crust.<\/p>\n<p>Striking that balance between tenderness and crispiness has been our greatest challenge, and after much trial and error, we have perfected a technique that allows us to offer a pork crackling that is truly in a class of its own.
